Home made Calissons - Calissons fait maison

At our Christmas celebrations, the calissons were the most popular. Calissons are a traditional French candy, traditionally made in Aix en Provence since the fifteenth century.

Here is my recipe : I use apricot jam instead of the traditional candied melon, you can also make them with orange marmalade.

Ingredients

300g sugar
200g almond meal
200g apricot jam

Icing : 120g icing sugar and 1 egg white

Preheat oven to 150 ° C .
In a heavy saucepan, combine the sugar with the almonds and jam. Cook over low heat, stirring with a wooden spoon until the mixture becomes dry and detaches itself from the sides of the pan.

Roll out the dough to a thickness of 5 mm by placing it between two sheets of baking paper to prevent sticking. Wait for the dough to cool. Then cut out the diamond-shaped calissons (or any other shape) and place on parchment paper on an ovenproof plate.

Working with the whisk or electric beater, mix egg whites with sugar until a smooth paste is obtained. Coat each calisson with this preparation with a small spoon or a brush.

Put in the oven for 5 minutes to allow them to dry. Cool and store in a metal box.
Pour notre fête de Noël, ce sont les calissons qui ont eu le plus de succès.

Le calisson est une confiserie traditionnelle faite à Aix en Provence depuis le XVème siècle

Voici ma recette : j'utilise la confiture d'abricots au lieu du melon confit, mais vous pouvez aussi les faire avec de la confiture d'oranges.

Ingrédients

300g sucre
200g amandes en poudre
200g confiture d'abricots

Glaçage : 120g sucre glace et un blanc d'oeuf

Préchauffer le four à 150°C .
Dans une casserole à fond épais, mélanger le sucre avec la poudre d’amandes et la confiture. Faire cuire sur feu doux en remuant avec une cuillère en bois jusqu’à ce que le mélange se dessèche et se détache des bords de la casserole.

Étaler cette pâte sur une épaisseur de 5 mm en la plaçant entre deux feuilles de papier sulfurisé pour éviter qu'elle ne colle. Attendre un tout petit peu que la pâte refroidisse. Puis découper les calissons en forme de losanges (où tout autre forme) et les disposer sur du papier sulfurisé sur une plaque pouvant aller au four.

Travailler au fouet (électrique si possible) le blanc d’oeuf avec le sucre jusqu’à obtenir une pâte homogène. Enduire chaque calisson avec cette préparation à l’aide d’une petite cuillère ou d’un pinceau.

Enfourner et laisser sécher 5 minutes dans le four. Laisser refroidir et ranger dans une boîte en métal.

I AM SO HAPPY TO FIND A RECIPE THAT DOES NOT USE BUTTER. I AM GOING TO MAKE THESE. AS FOR YOUR SON, HERE IN NYC IT IS AN EVERYDAY THING. IT IS SAD THAT CHILDREN ARE NOT EVEN SAFE IN SCHOOL. I HOPE IT STOPS FOR HIM. IT CAN DO ALOT OF DAMAGE TO HIS SELF ESTEEM

Mmmm... I've never heard of these kind of candies before, but they sound delicious. I'll bet you could make them with strawberry or other fruit jams as well. Thanks for the recipe! Grammy from Corgi Country
